The nutritional quality of dietary protein depends greatly on amino acid composition and the concentration of essential amino acids that are provided for the synthesis of proteins within the body. As a derivative of milk production, the amino acid (AA) profile in whey proteins is closely related to the amino acids required by the human body (1).* Whey proteins also have proportionately more sulfur-containing amino acids and contain a relative surplus of a variety of essential amino acids. This all results in an optimal balance of amino acids (building blocks of protein) needed for muscle growth.
Biological Value: A high biological value is important because it indicates the actual amount of protein absorbed and retained by the muscle tissues in relation to the amount consumed. Inasmuch as protein is intimately involved in anabolism (protein synthesis and muscle growth) whey protein may be the best candidate for maximizing muscle growth because it has the highest biological value of any other protein source (2).*
Immunostimulatory Properties: Along with strenuous exercise, other external factors can depress various aspects of the immune system resulting in an increase in bacterial and viral infections. Studies have indicated the immunoenhancing properties (3)* of whey protein and have noted the properties are dependent on the overall amino acid pattern resulting from the contribution of all its protein components (4).* Whey protein, rich in alpha-lactalbumin and beta-lactoglobulin, contains high amounts of the (AA) cysteine, a substrate used in the synthesis of glutathione (a major antioxidant of the body).
