WHEY PUMPED The nutritional quality of dietary protein depends greatly on amino acid composition and the concentration of essential amino acids that are provided for the synthesis of proteins within the body. As a derivative of milk production, the amino acid (AA) profile in whey proteins is closely related to the amino acids required by the human body (1).* Whey proteins also have proportionately more sulfur-containing amino acids and contain a relative surplus of a variety of essential amino acids. This all results in an optimal balance of amino acids (building blocks of protein) needed for muscle growth. Biological Value: A high biological value is important because it indicates the actual amount of protein absorbed and retained by the muscle tissues in relation to the amount consumed. Inasmuch as protein is intimately involved in anabolism (protein synthesis and muscle growth) whey protein may be the best candidate for maximizing muscle growth because it has the highest biological value of any other protein source (2).* Immunostimulatory Properties: Along with strenuous exercise, other external factors can depress various aspects of the immune system resulting in an increase in bacterial and viral infections. Studies have indicated the immunoenhancing properties (3)* of whey protein and have noted the properties are dependent on the overall amino acid pattern resulting from the contribution of all its protein components (4).* Whey protein, rich in alpha-lactalbumin and beta-lactoglobulin, contains high amounts of the (AA) cysteine, a substrate used in the synthesis of glutathione (a major antioxidant of the body). Once digested in the gut, the amino acids (unique to whey protein) can be taken up by T-cells (infection fighters), increasing their number (4).* The study of whey proteins also shows it to be rich in the substrates for glutathione (GSH) synthesis and increases GSH concentrations in a number of tissues within the body. Whey protein’s ability to increase GSH concentrations has shown positive effects on varied cancers (5, 6).* Amino acid Profile: In addition to whey proteins unique amino acid profile, it also features one of the highest percentages of branched-chain amino acids (BCAA) compared to other protein sources. Diets high in BCAA demonstrate greater signs of muscle preservation when the body is in a catabolic state (breakdown of muscle tissue). This is due to the ability of BCAA to improve nitrogen balance and serve as an energy source instead of breaking down skeletal muscle. Severe metabolic stresses such as sepsis, surgery, burns and strenuous exercise are associated with accelerated requirements for BCAA, therefore, the muscle is catabolized to release energy. Added L-Glutamine (1000 mg/serving): L-Glutamine is the most abundant “free” amino acid in the body but is considered a “non-essential amino acid” that can be synthesized in the body from glutamate or by oxidation from proline in the liver. Glutamine is synthesized in skeletal muscle (7) * and the concentration of free glutamine appears to influence whether muscle will break down due to a low glutamine content or build via a high glutamine content. Athletes suffering from “overtraining syndrome” seem to have decreased blood concentrations of glutamine that last for extended periods of time (7-9).* These decreased levels may lead to suppressed immune function and slow recovery time following exercise. Furthermore, subjects supplementing with oral glutamine showed elevated blood glutamine and growth hormone, suggesting glutamine’s potential benefit in terms of body composition (10, 11).* Patients recovering from trauma (surgery, burns, stress, chemotherapy, radiation etc.) (8, 9)*, also have an increased demand for glutamine which is probably the result of increased use by the immune system and the decreased integrity of various tissue beds involved in treatment (10).* Processing of Whey Protein: The best source of whey protein is achieved by using a delicate cross-flow filtration and ion-exchange process.
